Research & Development (R&D) Chefs

Descriptions & Duties

  • R&D Chefs research, develop, test and refine recipes, menus and food products for hotels, restaurant groups, catering operations, central kitchens and food businesses. They analyse consumer preferences and market trends; plan and conduct kitchen trials and sensory evaluations; establish standard recipes, specifications, yields, costs and production procedures; and work with culinary operations, food safety, quality assurance, procurement and marketing teams. They ensure that proposed products are safe, consistent, operationally feasible and commercially viable, and support product launch, staff training and post-launch review.

Trade Specific Competencies

Culinary Product Research and Development

R&D Chefs should be competent in culinary research, recipe and menu development, food product trials, sensory evaluation, recipe standardisation, food costing, yield control, food safety, quality assurance and product commercialisation. They should be able to convert consumer insights and culinary concepts into standardized recipes, menu items, products and operating procedures, evaluate technical and commercial feasibility, document specifications accurately, and coordinate cross-functional trials and staff training.

General Requirements

Academic qualification

  • A Higher Diploma or bachelor's degree in culinary arts, culinary arts and management, food science, food technology, hospitality management or a related discipline is normally preferred.

Professional qualification

  • Relevant qualifications in food hygiene, food safety or quality management would be an advantage.

Experience

  • Normally 3 to 5 years of relevant experience in culinary operations, recipe or menu development, food product development, food production or central kitchen operations.

Other specific requirements

  • Knowledge of food safety requirements, sensory evaluation, recipe standardisation, food costing and production processes; strong documentation, project coordination and communication skills.

Monthly Salary $20,001-$25,000

Monthly Salary $25,001-$40,000

Monthly Salary $30,001-$60,000*

*The salary ranges are indicative references based on comparable managerial and professional positions in the 2022 Manpower Survey Report of the Catering Industry, as Research Chef was not listed as a separate principal job in the 2022 survey. Research Chef will be included in the Catering Manpower Survey for the first time in October 2026. The salary information should be reviewed when the relevant survey findings become available.

Work Environment

  • R&D Chefs work mainly in test kitchens, research and development kitchens, central kitchens, production facilities and offices. The work involves hands-on food preparation and trials, desk-based research and documentation, and meetings with culinary, operations, quality assurance, food safety, procurement and marketing teams. Depending on operational needs, the role may require prolonged standing, handling hot equipment, cold storage visits, tasting sessions and occasional work outside normal office hours.
