  • Chief Sommeliers oversee the restaurant's wine operation, supervise the performance and training of the subordinates in wine and spirit operations, ensure customer satisfaction and organises wine tasting as well as monitor wine costs and perform inventory control.

Trade Specific Competencies

WSET (The Wine and Spirit Education Trust)

Chief Sommeliers with holders of WSET (Level 4) would be an advantage.

Court of Master Sommeliers

Chief Sommeliers generally attain the Level 3 "Advanced Sommelier Certificate" (AS) and Level 4 “Master Sommelier” (MS) from the Court of Master Sommeliers.

Knowledge on Wine and Spirit

Chief Sommeliers should possess knowledge on wine laws in different countries, grape variety and basic characteristics, opening and serving wine technique and basic wine tasting technique. Sense of taste and smell: An extraordinary sense of smell is important for Sommeliers because they must pair wines based on floral, herbal and fruity notes with ingredients in menu items.

  • Registered with WSET Level 1 – 4 and/or Court of Master Sommeliers Certificates Level 3 & 4 would be an advantage
